This Strawberry Chia Pudding is made with freshly puréed organic strawberries and tastes delicious. Chia Pudding in general is an excellent and rich breakfast with many antioxidants, calcium, phosphorus, and magnesium.
This recipe can also be made with frozen fruit, as the chia seeds thicken when liquid is added.
The beauty of a chia pudding recipe is that you can make a large amount and consume it over a longer period. You can either sweeten this recipe with a teaspoon of date syrup or leave the sweetening to the strawberries, as they already have a natural fructose content. To work their magic, the chia seeds should be covered in the fridge for at least 3 or 4 hours to thicken. It only takes 5 minutes to prepare.

Chia seeds are called super fruit for a reason. Besides the benefits such as many antioxidants, chia seeds also have a high omega 3 value and a lot of fiber, which is generally always good for the body. Chia seeds can also regulate blood sugar and the taste is neutral. Once you’ve tried this delicious strawberry chia pudding, you’ll hardly want to eat anything else for breakfast.
Where can you buy Chia Seeds?
I always recommend buying organic chia seeds because they have a pleasant and natural taste. You can find chia seeds in your regular organic supermarket or store, or you can order them online.
Ingredients
Organic Chia Seeds: They taste better in organic and, if you add the liquid of your choice, you have a delicious breakfast or snack between meals.
Organic strawberries: Good organic strawberries often have a sweetness, so you don’t need any added sugar. Strawberries have a high water content, which is why they balance this recipe well.
Organic dates: It’s optional if you want to add a date, but the Nour date in particular has a special caramel character that can benefit your chia pudding.
Coconut milk: You can use a milk alternative of your choice for this recipe, I use homemade oat milk creamer here as it goes perfectly with the vanilla note. This Homemade oat milk creamer and Almond milk are also good alternatives.
Garnish: You can dice your remaining strawberries and place them on top as a garnish. Shredded coconut is also delicious as it gives the recipe a crunchy and light texture.

How to prepare chia seed pudding
First, wash the organic strawberries, I like to do this with baking powder and lemon. Then place them in the Vitamix and blend on speed 5-8 for 1 minute, 30 seconds. You should make sure that the strawberries are velvety. I use the Vitamix A3500i Ascent Series for this. The Vitamix purées everything velvety smooth.
Secondly, add 3 tablespoons of chia seeds to a container of your choice. I use Weck jars for this recipe as they are small and handy and have just the right amount of chia seeds for my daily needs.
Then add the 400 ml of organic coconut milk or 300 ml of homemade oat milk creamer to your chia seeds.
The next step is to add your vanilla extract and date sweetener. Finally, add the puréed organic strawberries and whisk until everything is combined.
Then cover your glasses and put them in the fridge.

Yes, you can prepare chia pudding in advance and eat it at another time. However, I recommend eating your chia pudding within 3 days. Especially if you have fruit in it, your chia pudding can otherwise become watery.
