Making soup in your blender is so easy and delicious that you can hardly go wrong. I use my Vitamix A3500i Ascent Series for this recipe. On the 5-minute soup program, you’ll have your Vitamix Thai Pumpkin Soup blended quickly and easily.
The onion and other vegetables must only be sautéed briefly to caramelize and release the sweetness. All the ingredients, including the pumpkin, can then go into the Vitamix! The Vitamix pulverizes all ingredients into a velvety, smooth, and tender mass—delicious Thai notes such as red chili or coriander. By the way, if you don’t like coriander or can’t tolerate it, feel free to leave it out. The list contains many good ingredients, such as magnesium, iron, fiber, and vitamin C from the lime.
What you need
You will need a handful of ingredients for this delicious soup
1x organic Hokkaido pumpkin
1x organic white onion
2x organic garlic cloves
1x 1/4 organic ginger
400ml organic coconut milk
350ml filtered water
1x organic spice cube
2x 1/4 teaspoon salt
One pinch of salt
Instructions
Firstly, fry the onion with the garlic on level 6 until they caramelize and add the ginger.
Season everything with the salt and fry the ingredients for about 5 minutes.
Place all ingredients in the Vitamix and press the soup program, and in 5 minutes, your Vitamix Thai Pumpkin Soup is ready. Enjoy!
