It may seem cliché, but this recipe has everything your heart could desire in the fall. Warm, hearty, cinnamon, and slightly sweet, with a caramel finish. That’s how I would describe this recipe. The vegan whipped cream on top makes this autumnal trend drink perfect.
This recipe will warm you up on a cold fall morning and make you feel cozy and cozy afterward.
It is also easy to make. Simple ingredients such as pumpkin purée, espresso, cinnamon, and coconut whipped cream mean you can make a drink in no time. These are the ingredients you’ll need:
3x tablespoon pumpkin purée
100ml specialty coffee espresso
100ml filtered water
150ml homemade ode milk creamer or the milk of your choice
1tsp vanilla extract
1 cup (0.24 l) of ice cubes
2x tablespoons of pumpkin spice mix
2x tablespoon Demerara brown raw cane sugar

Pumpkin: I use my own puréed Hokkaido pumpkin for this recipe. You can also use canned organic pumpkin, for this dish you only need three tablespoons. These ingredients enhance the pumpkin flavor in the Pumpkin Spice Latte and give it a creamy and velvety texture.
Espresso: I recommend cold brew for a strong and delicious coffee flavor. I use organic espresso beans for the full-bodied taste. I use 2 coffee shots for the perfect taste.
Milk: You can use any milk you like. For this recipe, I use my homemade oat milk. But you can use any non-animal milk, like almond, or coconut milk.
Demerara sugar: This brown Demerara sugar is the queen of sugars. Demerara sugar specifies that it has a good malty sweetness, a higher molasses content, and a caramel finish. The sugar crystals are also slightly larger and look exquisitely beautiful. I think it’s the perfect sugar for this recipe. However, you can use any sugar you like, this is just a recommendation. You are also welcome to use maple syrup etc.
Pumpkin spice: I make this ingredient myself with my little mortar and pestle, or if you want it to be even quicker, with the Vitamix. Making this ingredient yourself gives your recipe that perfect little something, as you can adjust the flavor to your taste.
Bourbon Vanilla Extract: The delicious flavor of Madagascar Bourbon Vanilla extract surpasses any vanilla flavor ever. This ingredient gives the Pumpkin Spice Latte a certain depth.
Himalayan sea salt or regular sea salt optional: I have to tell you, I love the pink of Himalayan sea salt, that’s why I use it. You can also use regular. The salt is used to bind all the ingredients together.
